Low Fat Whole Wheat Honey Banana Muffins

(with flax seed, oat bran, and a splash of organic palm nectar crystals)

These muffins are a great snack for the kids (and mom and dad too) and are 100% healthy (but don’t tell the kids)! No refined flour or sweeteners and a good dose of fiber! Enjoy -- Happy Eating, Happy Health!!

Makes 24 muffins

INGREDIENTS:
  • 2 1/4 cups whole wheat flour

  • 1 1/2 cups milled flax seed

  • 1/2 cup all natural oat bran

  • 2 teaspoons baking soda

  • 1 teaspoon salt

  • 1/3 cup organic palm nectar crystals

  • 2 tablespoons wheat germ (optional)

  • 1/3 cup olive oil or canola oil

  • 1/3 cup unsweetened apple sauce

  • 2/3 cup honey

  • 4 eggs

  • 2 cups mashed ripe bananas

  • 1/2 cup hot water
DIRECTIONS:
  1. Stir together dry ingredients.

  2. Beat oil and honey together; add eggs and beat well.

  3. Add bananas and beat to combine.

  4. Add dry ingredients to wet, alternating with hot water; mix well after each addition.

  5. Spoon batter into 24 greased muffin cups; bake at 325 degrees for 15 minutes, or until muffins are golden brown and test done.

  6. Remove from oven and cool on rack.

Julie’s handy tip: For easy and perfect portions, use a gravy ladle when spooning batter into muffin tins.
