INGREDIENTS:
- 2 1/4 cups whole wheat flour
- 1 1/2 cups milled flax seed
- 1/2 cup all natural oat bran
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1/3 cup organic palm nectar crystals
- 2 tablespoons wheat germ (optional)
- 1/3 cup olive oil or canola oil
- 1/3 cup unsweetened apple sauce
- 2/3 cup honey
- 4 eggs
- 2 cups mashed ripe bananas
- 1/2 cup hot water

- Stir together dry ingredients.
- Beat oil and honey together; add eggs and beat well.
- Add bananas and beat to combine.
- Add dry ingredients to wet, alternating with hot water; mix well after each addition.
- Spoon batter into 24 greased muffin cups; bake at 325 degrees for 15 minutes, or until muffins are golden brown and test done.
- Remove from oven and cool on rack.
